Vegan Bran Muffins Recipe

Vegan is by far the most difficult vegetarian diet to commit with; being vegan means not eating meat or using anything that is made up of animals. Now if you are wondering what vegan people eat, well, they have actually a lot of options. You can make vegan bran muffins, for one. If you want to taste one, you can make it yourself.

  • 1 and 1/2 cups soy milk

  • 1/2 cup canola oil
  • 2 tablespoons molasses
  • 2 teaspoons vanilla
  • 1 cup whole wheat pastry flour (sifted)
  • 1/2 cup light brown sugar
  • 1 cup all-purpose flour (sifted)
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2/3 cup vegan cane sugar
  • 2/3 cup golden raisins.

Now if you want to add crunch on the top, prepare these ingredients too:

  • 1/2 teaspoon maldon salt
  • 1 tablespoon light brown sugar
  • 1 tablespoon soy margarine

These are for your toppings, but if you just want your vegan bran muffins to be plain you may set these aside.

Instructions:

Preheat the oven to 375 degrees F or 190 degrees C. While preheating the oven, combine the soy milk and bran and let the mixture set for 10 minutes. After 10 minutes, add vanilla, molasses and canola oil and then stir. On the other bowl, combine wet and dry mixtures, then add raisins and stir until mixed well. Pull out your muffin tin molder and line it with the paper lining. Then pour the mixture onto the molder with an ice cream scoop. If you want to have a crunchy top you may sprinkle brown sugar, salt and a thin slice of vegan margarine on top of the mixture. Bake it for 15 to 20 minutes. After 15 to 20 minutes pull it out of the oven and let it cool before taking it out of the molder. A tip to really make sure that you already have a cooked muffin is to take a knife or a stick and stick it into the center of the muffin and pull it out. If there is no wet mixture that sticks on to the knife or the stick, it means that it is well cooked or not yet cooked otherwise. If it is not cooked then you need to put it back into the oven.
